My parents went away this weekend, and I wasn’t happy. For one thing, I wanted to go. I yelped. I ran around. I jumped on their luggage. I wanted to go wherever they were going. I bet it was awesome and fun and really glamorous.
My weekend was spent on the couch, on the bed, and on the floor. I snored. A lot. My Auntie Speedy kept me company, and I barked out our neighbors. I waited.
And waited.
And waited.
6 months or 6 minutes went by.
Until finally they returned!
Best day ever.
I really wanted to know where they went:

I didn’t get an answer.
So, I waited until they made popcorn, and I knew I’d find some to eat, even if it’s bad for me. I’d get back at them for not inviting me.
I Swear I Didn’t Do It Kettle Corn
(vegan)
Ingredients:
- 1 T coconut oil
- 1 t sea salt, finely ground
- 1/2 cup popcorn kernels
- 1 T agave nectar
1. Heat oil, salt, and kernels on high in a non-stick pan, stirring to cover kernels in oil. Cover with lid. The kernels should rest in a single layer (e.g., you want each kernel to touch the bottom of the pan; if 1/2 cup is a bit too much, use a little less).
2. Continue to heat on high until rapid popping stops. Don’t wait too long or you’ll end up with burnt popcorn. Turn off heat.
3. Once the kernels have stopped popping (they’ll continue to pop after the heat is off), add 1/2 T of agave and shake (with lid on). Add the other 1/2 T of agave and shake again. Quick Cook Note: pour into a bowl and keep away from your dog (if you can).
